Laura, Vilmo, Marco, Fabio and Athos are the passionate vinegar makers that cultivate and nurture this gastronomic legend. The olfactory sense is always maturing, the reading of a bouquet becoming ever more delicate and gratifying. It is here that the experience of the master vinegar maker matters most, through patience, care, attention to detail and safeguarding the secrets of the recipe.

The rest is done thanks to time and nature, the passing of the seasons and the changing of the temperature over the day and through the years. Traditional Balsamic Vinegar of Montericco is truly rare as every phase of this antique craft is followed intimately by the vinegar masters themselves. Every precious bottle of Traditional Balsamic Vinegar of Montericco is unique and like no other, but each one, fruit of the same art, science and lineage.

THE TERRITORY

The hills surrounding Reggio Emilia

Our production is carried out exclusively in the ancient hamlet of Montericco di Albinea, in the province of Reggio Emilia, near a castle that looks out upon the great Po valley and on fine days as far as the Alps. The same outlook that centuries ago, beheld the passing of kings and emperors, merchants and simple travellers, who over time spread the word of this gastronomical gem. The starting point of every new barrel is the cooked grape must that comes from pressed grapes cultivated only in the province of Reggio Emilia.

Towards the Future

For many centuries this fruit of passion and ingenuity has graced the tables and palates of the most distinguished connoisseurs.  Its ancient origins date back to texts from 1046, when the German Emperor Henry III, on his way to Rome, requested the Father of Matilda of Canossa to honour him with the magical vinegar produced within his castle walls. Under the Este family rule from the 12th to 14th centuries, jealousy and infighting over the precious balsamic recipe and production secrets rose and fell only enriching more the evolution of Traditional Balsamic Vinegar until today.

You can not but fall in love with this synthesis of art and science from the dark dense luminescent drops to the penetrating aroma. Born as the Medicinal tincture exclusively available to Kings and Emperors, it has since entered into kitchens as a product of the utmost quality, enhancing flavours and enriching the simplest to the most refined of dishes.

Tastings, Aperitifs and Village stays

We are happy to organize - by appointment - guided visits to the Balsamic factory. We will tell you our story through tastes, first through our bottled balsamic varieties and vinegars followed by a tour to the attic to taste directly from the various wooden barrels. Woods such as juniper, chestnut, oak, cherry and ash all contribute to the different flavour, colour and aroma of each barrel.

On request we are able to organize an aperitif with wine from a selection of local wineries accompanied by Parmigiano Reggiano and/or mountain Pecorino and local salami.

It is also possible to stay in the castle village, in newly renovated accommodation, a stone's throw from the balsamic factory, with a splendid panoramic view. The apartment consists of a hallway into a kitchen living room with a fireplace and an upstairs double bedroom and ensuite. Breakfast is available on request.
