Hulled barley with pumpkin

6 servings with balsamic vinegar

Ingredients

  • 3 cups of hulled barley, soaked at least 6 hours
  • 9 cups of water (3 times the volume of the cereal)
  • 1 clove of garlic
  • extra virgin olive oil
  • 4 sprigs of rosemary
  • 3 shallots
  • 1 kg pumpkin
  • a drizzle of balsamic vinegar or seasoning Castello

Preparation

  1. Bake for 60 minutes the barley, immediately adding cold rosemary nd garlic. Salt halfway through cooking.
  2. Brown with 3 tablespoons of extra virgin olive oil and chopped rosemary (3 branches) ,then add the chopped shallots, and the pumpkin, cut into cubes of 1 cm side.
  3. Bake for 5 minutes over high heat. Add a little broth to simmer pumpkin. Bake about 15 minutes.

Mix the cooked barley to the sauce for a few minutes and season with salt.

Finally sprinkle with balsamic vinegar to taste.
